The recipe and production technology of Rubin [Ruby] cheese were entirely developed in 2009 by master cheesemakers from Radzyń Podlaski. It is here that unique flavor cultures are created, making Rubin [Ruby] the most original proposition in the Cheesemaker’s Treasures collection. Its character appeals both to those just beginning their journey with long-maturing cheeses and to experienced gourmets.

 

Rubin [Ruby] matures for a minimum of 3 months. It is a classic example of a cheese whose aroma leads the senses in a different direction than its flavor on the palate. Its aroma is intense and rustic, reminiscent of French farmhouse cheeses, while its taste remains delicate and buttery, with a subtle creamy sweetness.

 

This long-maturing cheese has a pale, light-yellow color and a creamy, elastic texture. 

Characteristics of Rubin [Ruby] cheese

Rubin [Ruby] is delicate, with an aromatic, rustic scent. It pairs perfectly with rosé wines and semi-dry red wines, and is ideal for a cheese board, baked dishes, or fresh salads.

 

Rubin [Ruby] cheese is a remarkable example that Polish long-maturing cheeses can be just as refined as Europe’s finest, combining tradition, originality, and a truly unique taste.
